Mexican Pizza Recipe

This is another one of my favorite meals! I got the basic idea for this recipe from my parents. However, their recipe uses their homemade salsa made with their fresh garden tomatoes so it far surpasses mine!

The best part of this meal is it takes MINUTES to prep and cook. You will see a pattern here with my meals: Quick and easy. As I've mentioned before, I cook my proteins in bulk once a week and that really saves time down the line. It's easy to add to any dish that I'm making. Some things you can cook and freeze, too. For example, ground turkey- I will cook about 4 pounds of it, put half in the fridge and the other half in ziploc bag and throw it in the freezer. That is a huge time saver! I will aslo mention that we buy Organic foods as much as possible. Costco sells a lot of organic foods now in bulk for a very fair price - It's so much more available and affordable now. I highly recommend it, if you can swing it.


Ezekial Tortilla crust with your favorite toppings!
Mexican Pizza

Ingredients:

(serves 1)

  • 1 Large Ezekiel Tortilla

  • 1 (2oz) single serving container Wholly Guacamole (or guac of your choice)

  • Salsa

  • 2 oz (56g) ground turkey, chicken, beef (protein of your choice)

  • 28g shredded cheddar cheese

  • **Add extra veggies of your choice**


Directions:

Preheat oven to 425 degrees. Spread your guacamole over tortilla first, add protein, salsa, cheese and other toppings. Bake for 5-8 minutes. Keep an eye on it - the Ezekiel tortillas can burn easily.
