This is such a great meal on-the-go option for a busy day! Whether you are running from place to place with the kids, on the road, at work, or need something to pack for an outdoor adventure, this is really easy to whip up and takes minimal time to prep and pack.
Ingredients:
(serves 1) ***See below for multiple servings
1 tbsp taco seasoning
Juice from 1 Lime
2 tbsp almond milk or water
Sliced bell peppers
Chopped avocado OR 1 single serving size Wholly Guacamole
Chopped lettuce/greens of your choice
10g cheddar cheese (optional)
1 Flatout Whole grain wrap
Directions:
In a small bowl, whisk the taco seasoning, lime juice and almond milk. Then mix it in with your shredded chicken. Place all of the ingredients to one side of your wrap. (If you're using wholly guacamole, spread the guac in a layer over the wrap and then add the rest of your ingredients on top). Then roll up your wrap and it's ready to eat. To pack: cover and roll with parchment paper and then outer layer of foil to seal. Keep refrigerated or in a cooler until you're ready to eat.
**You can also serve this up hot if you're eating it at home! Just place all the ingredients to one side of the wrap, bake in the oven open-faced for about 5 minutes or so at 450 degrees F, then roll it up and eat.
***To make multiple servings of this wrap, an easy way to prep it would be to just make one large batch of shredded chicken ahead of time and add your seasonings to the crock pot while it cooks. See recipe for shredded chicken in the link above. For every pound of chicken you cook, add 1 package of taco seasoning. Another option would be to add salsa to your chicken while it cooks in the crock pot.
