I'm sharing another one of my favorite meals! I have come up with a little trick to utilize my favorite Korean BBQ sauce from Trader Joe's without having to worry about so much sugar and extra carbs. Keep in mind that you can change with vegetables or the protein to make it your very own. You can also make it with rice instead of Ramen.. Lots of options.
Ingredients:
(Serves 1)
4 ounces (112 grams) shredded organic chicken breast. See here on how to prep: Shredded Chicken
1 1/2c - 2c Organic Chicken broth
Trader Joe's Korean BBQ sauce **
1 tbsp Braggs Amino Acids or Soy Sauce
Dash of salt and pepper to taste
Dash of red pepper flakes (if you like it spicy like me)
1 cup organic broccoli florets
1/4 cup chopped organic red bell peppers
1/2 cup chopped organic zucchini
1 block Milet & Brown Rice Ramen Noodles *** See below for link. I found at Costco but also sold on Amazon and other health food stores***
Chopped fresh cilantro for garnish
Directions:
In a small to medium sized pot, add chicken broth, Braggs, chopped vegetables and spices. Bring to a boil and then let simmer until veggies are al dente. Then add your block of Ramen. These take about 4-5 minutes to soften and cook (unless you live at 7000 ft altitude like I do!). Once the noodles are soft (I typically go al dente here also - if you overcook they'll get mushy). The very last thing you add is the 2 tbsp of Korean BBQ. Mix well with other ingredients in the pot and then serve in your bowl. Add freshly chopped cilantro as a garnish (this is the best part of the dish - don't skip!!) And then EAT!
